Phew! That's a mouthful!
Ok, get ready for mind exploding deliciousness and also the easiest recipe under the sun using two of my absolute favorite sweet treats of all time.
Some tips to make this recipe even easier?! 1. Always keep Banana Ice Cream in your freezer. 2. Always keep Honey Quinoa Granola in your pantry. For your own benefit, you should be doing those two things anyway - but especially because it means you can make these little treats in a snap. Here's how.
Quinoa Honey Granola - Frozen Banana Bites
2 bananas, sliced and frozen
1 cup Honey Quinoa Granola
Place frozen bananas in a food processor or mini-chop and blend until completely smooth. You may have to remove the lid and push the big banana chunks to the bottom, but as long as you keep blending, it will smooth out into a fluffy, creamy consistency. (If you have banana ice cream in the freezer...use that!)
Spoon banana mixture into a mixing bowl and add *Honey Quinoa Granola (recipe below), fold the granola into the banana mixture.
Using a silicone mold (you can also use mini-muffin tins for this), scoop banana mixture into the molds up to the top. Once you are finished filling all the molds, add a toothpick (optional) if you want to make them more like a popsicle! (for really little guys, use caution with toothpicks!)
Freeze for an hour and remove bites from the mold!
